1 c husked hazelnuts 8 tbs (1 stick) butter, room temperature 1/3 cup sugar 1 egg 1 teaspoon vanilla extract 1 c all-purpose flour 1/2 tsp baking powder 1/2 tsp salt 4 ounces good-quality semisweet chocolate Preheat oven to 350 degrees. Place hazelnuts on baking sheet. Bake until they're a shade darker and fragrant, about 10 to 15 minutes. Remove from oven and set aside to cool.

Cream the Sugar and Margarine, add the egg, blend well. Sift all the dry ingredients and add to the mixture. Add the Raisins. Shape into 1 inch balls and dip into additional sugar, place on cookie sheet sugar side up.

If you are going to use a pasta machine to roll out the dough you may at this point form the dough into a disk and cover with plastic wrap.
