Peanut Butter Cookies

1 c Crunchy Peabut Butter 1 c Sugar 1 egg 1 tsp baking soda Preheat oven to 350. Beat together peanut butter and sugar until combined well. Add the egg and baking soda. Roll into 1 inch balls and place on cookie sheets. With tines of a fork flatten balls. Bake cookies until puffed and pale golden, about 10 min.

Chocolate Dipped Hazelnut Shortbread

1 c husked hazelnuts 8 tbs (1 stick) butter, room temperature 1/3 cup sugar 1 egg 1 teaspoon vanilla extract 1 c all-purpose flour 1/2 tsp baking powder 1/2 tsp salt 4 ounces good-quality semisweet chocolate Preheat oven to 350 degrees. Place hazelnuts on baking sheet. Bake until they're a shade darker and fragrant, about 10 to 15 minutes. Remove from oven and set aside to cool.

Pistachio Cookies (for the holidays)

3 Sticks of Margarine 2 Packages of Instant Pistachio Pudding 2 1/2 c Flour Red & Green Food Coloring Red & Green Sugar Preheat oven to 350. Cream the margarine, add the Pudding mixture, add the Flour. If this is a red batch of cookies, add about 1/2 tsp of Red Food Coloring, for Green, you can use a bit less than 1/2 tsp of the Green Food Coloring.

Sparkling Raisin Molases Cookies

3/4 c Margarine 1 c Sugar 1 Egg 1/4 c Molasses 2 c Flour 2 tsp Baking Soda 1/2 tsp Salt 1/2 tsp Cinnamon 1/4 tsp Ground Cloves 1/4 tsp Ground Ginger (not fresh) 1 c Raisins Preheat oven to 350. Cream the Sugar and Margarine, add the egg, blend well. Sift all the dry ingredients and add to the mixture. Add the Raisins. Shape into 1 inch balls and dip into additional sugar, place on cookie sheet sugar side up.
